Banana Nut Muffins


I always love to cook banana-nut muffins. I have one child who does not tolerate nuts very well right now, and another who likes nuts just fine, but for some reason does not like nuts in a muffin. What is the deal with that?! The nut is the same nut - a walnut. Then I have another child who, "I like cheese on pizza, but I don't like cheese." O-kay. Right. Got it, hun. So, yeah...that's the story of me in the kitchen with 8 children. Now, don't get me wrong - I am no "short order cook". Therefore, my children eat what we prepare. It is healthy and it is what we have prepared, so they know they are supposed to be grateful to their parents and to the Lord, then eat their food. However, there have been times when a child has tried their very best to eat a particular food and just gagged so badly. So, you really just have to KNOW your child and when they just have an aversion to some kind of food. That is a different story from a child just being straight obstinate about their dinner and wanting to be difficult. There are times when their body just does not agree with that particular food.

The muffins turned out rather scrumptious this time around. I was sure to use plenty bananas and mix them well. This is a spelt recipe, so it was an extra soft muffin. ¡Que delicioso! :-)



Recipe:

  • 6 3/4 cups spelt flour
  • 3 tsp himalayan sea salt
  • 6 bananas
  • 3 eggs
  • 3 tsp cinnamon
  • 1/2 cup walnuts (or omit/replace them if you have allergic children)
  • 1 1/2 tsp nutmeg
  • 3 cups buttermilk
  • 3 tsp baking powder
  • 3 tsp baking soda
  • 1 1/2 cup honey
  • 1 1/2 cup coconut oil (melted)
  • 3 tsp vanilla extract

Mix dry ingredients into a bowl. Mix wet ingredients (including bananas) into a separate bowl. Add the wet to the dry and mix until well blended. Bake at 400 degrees for about 20 minutes. This is a very large batch, so you will have to watch and check your muffins with a toothpick to see if they are done enough for you. Leaving them in too long will make the bottoms brown a little more than you may like.
